Short winter days, mean long cold nights and all I want to do is to snuggle in a bulky sweater, hang with my family and have something warm. This super easy sausage soup is packed with gut healing collagen, vitamins A, C and K as well as protein. This is also paleo and AIP (Autoimmune protocol) friendly.
1 tbsp coconut oil
1/2 medium onion chopped
3 celery stalks chopped
1 package of sausage cut into bite size pieces – I used a bratwurst (no sugar added)
2 large sweet potatoes peeled and chopped
1 tsp dried thyme
1 bay leaf
2 14 oz jars of chicken or beef bone broth – I used Epic brand
1 head of kale stems removed and chopped
- In a large pot, add the coconut oil over medium heat. Add the onions and cook stirring occasionally for 2-3 minutes until just starting to become translucent. Add the celery and sausage, stir and cook until the sausage is browned.
- Add the sweet potato, thyme and bay leaf. Stir to combine. Then add the bone broth. Stir and bring to a boil. Turn down to a simmer and cook until the sweet potato is tender.
- Add the kale and cook just until the kale is wilted. Then serve in bowls. I like to have my soup with some paleo friendly almond flour bread and ghee.
