Easy Sausage Soup

Short winter days, mean long cold nights and all I want to do is to snuggle in a bulky sweater, hang with my family and have something warm. This super easy sausage soup is packed with gut healing collagen, vitamins A, C and K as well as protein. This is also paleo and AIP (Autoimmune protocol) friendly.

Ingredients

1 tbsp coconut oil

1/2 medium onion chopped

3 celery stalks chopped

1 package of sausage cut into bite size pieces – I used a bratwurst (no sugar added)

2 large sweet potatoes peeled and chopped

1 tsp dried thyme

1 bay leaf

2  14 oz jars of chicken or beef bone broth – I used Epic brand

1 head of kale stems removed and chopped

Directions

  1. In a large pot, add the coconut oil over medium heat. Add the onions and cook stirring occasionally for 2-3 minutes until just starting to become translucent. Add the celery and sausage, stir and cook until the sausage is browned.
  2. Add the sweet potato, thyme and bay leaf. Stir to combine. Then add the bone broth. Stir and bring to a boil. Turn down to a simmer and cook until the sweet potato is tender.
  3. Add the kale and cook just until the kale is wilted. Then serve in bowls. I like to have my soup with some paleo friendly almond flour bread and ghee.
